Technology Theory:

Extruding and inflating technology is the key and character of CYS-100, which is also the most popular and high food technology. After extruding, the starch proceedsαtransformation. The volume expands s, and water solidity increase, thus easy to be digested.

As well as known, major element of potato and grain is unripe starch (WHAβstarch), which is difficult to dissolve into the water, not influenced by enzyme, so digest is not easy. Only after dissolving in the hot water, transmit to theα starch, the food can be digestible. Cooked rice or pasta, in the normal or low temperature, will become bad taste, which is the ‘turning back’ of the starch.
